TYPICAL PRODUCTS

Typical Lake Garda cuisine exhaustively makes use of the lake fish, wine and oil – a distinctive feature of this area – and truffles.


FISH

Carpione, more and more rare to spot, is only found in lake Garda and it is the most precious fish in the area. Next, in order of importance, follows the freshwater herring, imported to Lake Garda in 1918 where it found very favourable conditions. The Lake whitefish or common whitefish (known as “corregone” in Lake Garda or "lavarello" in other regions) finds its natural habitat in the great lakes of the northern hemisphere where it is easy to find under different species.


OIL

Type: Casaliva, Frantoio, Leccino and Pendolino; Colour: from green to yellow with shades of gold; Scent: fruity with medium or mild intensity alongside a light grassy scent; Flavour: fruity, slightly bitter and peppery, at times with traces of sweet almonds; Acidity: 2 - 0.3%; Best paired with; lake fish, white meat and salads.



TRUFFLES

Truffles find favourable conditions in Valtenesi and the valleys surrounding the Garda Bresciano area where at least five truffle species have been discovered.



WINES

“GARDA CLASSICO CHIARETTO”

Obtained through a white wine making procedure based on contact between the solid parts of the clusters with a subsequent close separation of the must during fermentation. Garda Classico Chiaretto is delicate in all its properties, starting form the rosé colour though to its round and strong flavour. Chiaretto is best served with appetisers, vegetables, white meat and lake fish. Ideal service temperature is 12°-13° and within one year from bottling.

"GARDA CLASSICO GROPPELLO"

Made from the homonymous vine variety. It is a red wine with a shiny colour, slightly fruity scent alongside a dry and soft flavour.
It is best served with red meat, roasted meat, sausages and cheese. Ideal service temperature is around 18°.


"GARDA CLASSICO NOVELLO"

Produced following the carbonic maceration method. This method consists in putting whole freshly picked grapes into special containers holding carbon dioxide. “Novello" is a young red wine with an intense colour and fresh taste. It is best served with very flavoured meat and medium seasoned cheese and sausages. Ideal with roasted chestnuts and served at a temperature between 16° and 18°.


"GARDA CLASSICO SPUMANTE ROSÉ"

Produced following the natural refermentation method. The short contact between the grape skins and during fermentation required by this method creates a special rosé colour. It has a fruity scent and a very strong flavour. Ideal for appetisers and and pairing with light food. Best served at around 6°-7°.


"GARDA CLASSICO BIANCO"

Obtained through the special mix of Rhine and Italian Riesling. This wine is produced through a kind of technology aiming at maintaining the highest number of promary aromas and youthful fragrance. “Garda Classico Bianco” has a strawish colour, flowery scent and a dry taste. Best served with lake fish, crustaceans , seafood, vegetables and rice based baked foods. Best served at around 8°-9°.
